Classic Greek salad 

Classic Greek salad

Ingredients:

  • ½ cup cherry tomatoes halved, or 3 vine-ropes tomatoes
  • 3 Persian cucumbers sliced
  • ½ small red onion sliced
  • ½ green pepper sliced
  • 4 ounces black kalamata olives
  • 8 ounces feta block


Greek Salad Dressing:

  • 4 tablespoons extra virgin olive oil
  • 2 tablespoons red wine vinegar
  • ½ teaspoon dried oregano
  • ¼ teaspoon salt
  • ¼ teaspoon black pepper


Instructions:

1.Place the tomatoes, cucumbers, red onions, green peppers, olives and feta cheese in a large serving bowl.

2.Mix the ingredients of the salad dressing together in a small bowl and drizzle over the salad ingredients. Lightly toss to combine, being careful not to over-mix or break up the feta cheese (alternatively, toss everything and then add the feta blocks on top).


SERVES – 6 PEOPLE



CUCUMBER AND TOMATO SALAD

CUCUMBER AND TOMATO SALAD

Ingredients:

  • 6 Small Cucumbers diced (or one large English cucumber)
  • 1- pint Cherry or Grape Tomatoes sliced in half or quartered
  • 1/2 Purple/Red Onion thinly sliced
  • Dressing:
  • 2 Tbsp Avocado Oil or Olive oil
  • 2 Tbsp Balsamic Vinegar or Red Wine Vinegar 
  • 1 Lemon juiced
  • 1 Tbsp Italian Seasoning
  • 1 tsp Salt
  • 1/2 Tsp Black Pepper


Instructions:

Add the cut-up tomatoes, cucumbers, and onion into a large bowl

In a small bowl, add all of the dressing ingredients, mix and pour over the bowl of veggies.

Mix until combined and serve. Enjoy.


Notes:

Place leftovers in a container and store in the fridge for up to 3 days. Serve cold. We do not recommend freezing.Serving size about one cup


Substitutes:

Tomatoes: Use any small cherry tomatoes, or your next option will be vine-ripe tomatoes

Onions: Red onion works best, but you can also use white sweet onions

Oil: Avocado or olive oil. Grapeseed oil is also ok

Vinegar: We love balsamic, but you can also use red wine vinegar.

Seasoning: if you don't have any Italian seasoning handy, use these other herbs to make some: dried parsley, basil, oregano, thyme, and rosemary.



Chickpea Salad 

Chickpea Salad


Another delicious and colorful salad you can make in few minutes!


Ingredients:

  • A can of washed and filtered chickpeas.
  • 4-5 tablespoons canned corn.
  • 1/4 finely chopped red onion.
  • 1/4 chopped red bell pepper
  • A handful of finely chopped parsley
  • Seasoning: salt,black pepper, extra virgin olive oil, lemon.


Mix everything and serve.
