Chocolate Fudge Cupcakes


Ingredients:

  • 1 cup all-purpose flour  
  • 1 cup granulated sugar  
  • 1/2 cup unsweetened cocoa powder  
  • 1 tsp baking powder  
  • 1/2 tsp baking soda  
  • 1/2 tsp salt  
  • 2 large eggs  
  • 1/2 cup whole milk  
  • 1/2 cup vegetable oil  
  • 2 tsp vanilla extract  
  • 1/2 cup boiling water  


Instructions 

  

1. Preheat your oven to 350°F (175°C) and line a cupcake pan with paper liners.


2. In a large bowl, sift together flour, sugar, cocoa powder, baking powder, baking soda, and salt.


3. Add eggs, milk, oil, and vanilla extract to the dry ingredients. Mix until smooth and well combined.


4. Carefully add the boiling water to the batter, and mix well to combine. The batter will be thin, but this is expected.


5. Pour the batter evenly into the prepared cupcake liners, filling each about two-thirds full.


6. Bake in preheated oven for 18-20 minutes, or until a toothpick inserted into the center of a cupcake comes out clean.


7. Allow the cupcakes to cool in the pan for about 10 minutes before removing them to a wire rack to cool completely.
